You should be able to unscrew the head, turning it counter clockwise looking down from above but it may require some force to do so if you've never had it off.

On the U-1xx series there was a "wingnut" IIRC that allowed adjustment of the angle brace between the leg and the central spider assembly. I topped it with the rc2 ballhead, but I still have a Bogen 3 way pan tilt head as an alternative.
